Baked-on oven rack grease has been heated to 350 to 500 degrees repeatedly across dozens or hundreds of cooking cycles, which polymerizes the oil into a layer that has essentially bonded to the metal. The Bathtub Method

For a slightly different approach, place the racks in a large garbage bag with 4 to 6 dryer sheets and a cup of warm water. Seal the bag and leave overnight. The chemicals in the dryer sheets coat the baked-on residue and reduce its adhesion significantly. Rinse and wipe the next day. This method is slightly less effective than the bathtub soak for heavy buildup but works well for regular maintenance cleaning.
