Ingredients
  

  • 1 pound chicken breast sliced thin
  • 2 cups frozen stir fry vegetables
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic minced
  • 1 tablespoon cooking oil
  • 2 cups cooked rice for serving

Method
 

  1. Heat oil in a large skillet or wok over high heat.
  2. Cook chicken in a single layer for 3 to 4 minutes per side until golden. Remove and set aside.
  3. Add frozen vegetables to the same pan. Cook 4 to 5 minutes until heated through.
  4. Mix soy sauce, honey, and garlic in a small bowl.
  5. Return chicken to the pan. Pour sauce over everything and toss to coat. Cook 1 more minute.
  6. Serve immediately over cooked rice.

Notes

This recipe uses only ingredients from the budget grocery list. Swap chicken for ground turkey or tofu to keep costs even lower. Frozen stir fry vegetables work just as well as fresh and cost half as much.
