Chia Seed Pudding

Chia seed pudding with the right ratio and stir-twice rule. No slime texture. 5-day make-ahead breakfast.

Ingredients
  

  • 3 tablespoons chia seeds
  • 1 cup milk dairy or non-dairy
  • 1 to 2 tablespoons honey or maple syrup
  • 0.5 teaspoon vanilla extract
  • Pinch of salt

Method
 

  1. In jar or bowl, combine milk, sweetener, vanilla, and salt. Whisk to dissolve.
  2. Add chia seeds and whisk vigorously for 30 seconds.
  3. Refrigerate 15 minutes. Stir thoroughly, scraping bottom and sides.
  4. Refrigerate 15 minutes more. Stir again.
  5. Refrigerate at least 2 hours, ideally overnight. Top with desired toppings before serving.
