Freezer Breakfast Burritos

Freezer breakfast burritos that microwave in 90 seconds. 12 burritos in 45 minutes, under $1.50 each. Foil-wrapped to prevent sog.

Ingredients
  

  • 12 large flour tortillas 10-inch
  • 12 large eggs
  • 0.25 cup whole milk
  • 1 pound breakfast sausage or bacon
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 15-ounce can black beans, drained and rinsed
  • 1 cup salsa drained
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Method
 

  1. Cook sausage or bacon in skillet until fully cooked. Drain. Chop bacon if using.
  2. Whisk eggs with milk, salt, pepper. Scramble in same pan with 2 tablespoons remaining fat. Pull off heat while still slightly wet.
  3. Lay tortilla flat. Add egg, meat, cheese, beans, and drained salsa. Fold sides in, roll tightly from bottom.
  4. Wrap each burrito tightly in foil. Place all 12 in gallon freezer bag. Press out air and freeze.
  5. Microwave: remove foil, wrap in damp paper towel, 60 seconds, flip, 30 to 60 more seconds. Oven: 350 degrees with foil for 25 minutes from frozen.
