One Pot Creamy Tomato Pasta

Everything cooks in a single pot including the pasta. No draining, no separate sauce, no extra dishes. Dinner in 20 minutes flat.

Ingredients
  

  • 1 pound penne or rotini pasta uncooked
  • 1 can (14 oz) diced tomatoes
  • 3 cups chicken or vegetable broth
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1/2 cup heavy cream or cream cheese
  • 1 cup fresh spinach optional
  • salt and pepper to taste
  • 1/4 cup parmesan cheese grated

Method
 

  1. Combine uncooked pasta, diced tomatoes, broth, garlic, Italian seasoning, salt, and pepper in a large pot.
  2. Bring to a boil over high heat, stirring occasionally so the pasta does not stick.
  3. Reduce heat to medium and cook for 12 to 15 minutes, stirring every few minutes, until pasta is al dente and most liquid is absorbed.
  4. Stir in heavy cream or cream cheese and spinach if using. Cook 2 more minutes until creamy.
  5. Top with parmesan cheese and serve directly from the pot.

Notes

Do not drain the pasta water — it becomes the sauce as the starch thickens. If the pasta absorbs too much liquid before it finishes cooking, add a splash more broth. Works with any short pasta shape.
