Sheet Pan Salmon and Vegetables

A sheet pan salmon dinner with crispy vegetables and tender fish in 25 minutes. Staggered timing and lemon-garlic butter.

Ingredients
  

  • 4 salmon fillets 6 ounces each
  • 1 pound baby potatoes halved
  • 1 pound asparagus trimmed
  • 1 lemon sliced into rounds
  • Juice of half a lemon
  • 4 tablespoons olive oil divided
  • 4 cloves garlic minced
  • 4 tablespoons butter melted
  • 2 teaspoons salt divided
  • 1 teaspoon black pepper divided
  • 1 teaspoon dried thyme

Method
 

  1. Heat oven to 425 degrees with sheet pan inside for 5 minutes.
  2. Toss potatoes with oil, salt, and thyme. Spread on hot pan. Roast 12 minutes.
  3. Pull pan out. Add seasoned asparagus and salmon fillets. Top salmon with lemon slices. Roast 12 to 14 minutes.
  4. Melt butter with garlic and lemon juice.
  5. Drizzle lemon-garlic butter over everything. Serve immediately.
